This course centers around the elegant art of cascading floral cakes—where flowers shape the body of the cake through vertical flow and natural movement. You’ll learn how to guide the eye through graceful movement and layering that bring both height and harmony to your cake design.
In this course, you’ll focus on the expressive beauty of diamond and teardrop-shaped petals, exploring how to build depth and create soft, natural motion in your floral compositions. You’ll gain skills in petal shaping, directional control, and elevation—key elements for creating dynamic, yet cohesive designs that feel both structured and organic.
You’ll work with three flowers that differ in shape, scale, and arrangement style:
Clematis – this flower becomes your focal point, with its distinct diamond-shaped petals and open, star-like form. You’ll learn how to pipe clematis that feel airy yet bold, and how to position them to establish vertical flow and upward movement on your cake.
Daisy – with its dainty, pointed petals—often a variation of the diamond shape—the daisy beautifully complements the clematis flower. Together, they create a unified rhythm throughout the cascade. You’ll learn how to position daisies to enhance vertical flow and add visual clarity, creating a seamless connection between each floral element.
Wax Flower – composed of tiny, clustered blooms, wax flowers act as soft fillers that enhance the structure of your design. You’ll use them to gently guide the eye upward or downward, depending on the direction of your vertical composition.
You’ll explore how to design in layer to create cakes that feel both sculptural and natural. By learning to balance bold focal flowers with delicate accents, you’ll achieve designs with movement, depth, and visual harmony from top to base.
